I Made Edible Biscuits!

Over the past few years, I have gotten pretty good at baking. I can make basic cakes, cookies and muffins. I can even make pizza dough.

But, biscuits have always eluded me. I have tried all sorts of recipes and techniques. They always turned out hard, tasting like cooked flour. So, one of my goals for this Summer vacation was to learn how to make good biscuits. I nailed it on my first try. Woah!

It was a spur of the moment idea. As we sat on the porch this afternoon, I thumbed through the May issue of Southern Living. I came across a lovely article about biscuits that included step by step photos of how to make them.  We had fresh shrimp that we were going to boil for supper and I thought that it would be nice to have  fresh, fluffy biscuits to go along side. I was sure I was  just dreaming because my biscuits always turn out bad. Really bad.

I gave it a shot anyway and I hit a home run!

These biscuits were made with flour, butter and sour milk that I made by adding vinegar to regular whole milk.

I grated a stick of frozen butter and mixed it into the flour. Then I made a well in the middle, poured the sour milk in and stirred EXACTLY 15 times, because that is what the recipe said.

Then I turned the mixture out onto a floured board.

I rolled and folded the dough 5 times. Then I rolled it out again to a 1/2 inch thickness and cut out my biscuits.

I placed the rounds together on a parchment lined jelly roll pan.

Then I brushed them with melted butter.

I placed them in a 475 degree oven for about 15 minutes. And they turned out high, flaky and fluffy and so very tasty.

They were the perfect accompaniment for these beautiful shrimp.
