I had a girls’ night last night. I hosted a Jamberry Nails “Margarita and Manicures” party with my friend, Allison. I have been dying to try this recipe for Pumpkin Churro Cake from the blog Confessions of a Cookbook Queen and I thought this would be the perfect occasion. After all, we are in the thick of Pumpkin Spice Latte season, formerly known as Fall and I planned to serve Tex-Mex food.
I ran out of time to make a full on layer cake, so I improvised and made Pumpkin Churro Cupcakes. Oh my! They turned out to be super delicious!
I followed this recipe for the pumpkin cupcakes from Lil’ Luna. Then, I added a cinnamon and sugar coating just like the layer cake recipe.
For this coating, I combined about 1/2 cup of sugar and 2 tsp of cinnamon. I brushed the cooked and cooled cupcakes with melted butter and dunked them in the sugar mixture.
Then I topped them with the cream cheese frosting.
Seriously, they were so good! They would make a yummy Thanksgiving dessert.
