Rolo Pretzel Turtles: Day 10 of 12 Days of Christmas Cookies

So, it’s after Christmas and I am still talking about these 12 Days of Cookies.  Everyone else is eating kale and quinoa and I am still eating cookies. I’m okay with that. I am DETERMINED to get these cookies up on the blog. If you are one of those people who has resolved to only eat plant matter for the next few weeks, then just bookmark these.

Save these recipes for next year. Save them for Easter or the next holiday. Cookies should be eaten year round, you know. I’m all for the occasional kale salad or smoothie, but I’m also all for the occasional cookie. Ya gotta keep it all in balance.

Day 10 is not really a cookie. Meet the ultimate trifecta! That’s it… 3 simple ingredients form these amazing little morsels. Are you ready for this? Rolo candies, pretzels and toasted pecans.

That’s it! It’s pretty foolproof. Just make sure you unwrap the Rolos.

Here’s how these happen: Toast some pecan halves. I toast them in the oven at 350 degrees for about 5-7 minutes. Let them cool. While they are cooling, unwrap your Rolos. I usually unwrap an entire bag at once. That’s the most laborious part of this recipe.

Then, place your pretzels on a parchment lined baking sheet. I use the Snyder’s Pretzel Snaps because I like the square shape. Any small pretzel should work though. Next, put one Rolo on each pretzel.

Place the baking sheet in your oven that’s still warm from toasting the pecans. I leave it in there for a few minutes or until I see that the Rolos are getting shiny and starting to melt. Then, take the pan out of the oven. Immediately, start placing one pecan half on top of each Rolo. Push the pecan down until the Rolo flattens out a bit.

Do this with all of your Rolos. Then place the pan somewhere to cool. If I am in a hurry, I put it in the fridge.

These little guys are so good. My friend, Mary Charles, introduced me to these several years ago and I continue to make them every year. They do not last long around here!
