Cheese Straws

I usually wait until the holidays to make cheese straws, but, recently I pulled out my Mom’s cookie press and made some for a Southern inspired tea. I don’t know why I don’t make them more often. Cheese straws are pretty easy to make and they taste just as yummy now as they do during the holidays.

They are great for nibbling with cocktails. They also make excellent gifts for hostesses, friends and more. Below, you will find the recipe for these yummy bites.

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/2 pound sharp orange Cheddar, room temperature
  • 1/2 cup (1 stick) butter, room temperature

Instructions

  1. Grate cheese and let it and the butter come to room temperature.
  2. Preheat oven to 375 degrees.
  3. Cream butter and cheese using a stand mixer. Combine flour, salt, pepper and paprika and add to mixer bowl. Mix until dough is smooth.
  4. Pack dough into a cookie press fitted with a star disk. Pipe into ribbons onto parchment paper. Cut into your desired size. I like to cut mine to about 2 inches.
  5. Place onto parchment lined baking trays. Bake for about 13 minutes. Sprinkle a little salt on them right as they come out of the oven.
  6. Store in an airtight container.
