Last Christmas, I made a ton of cookies. In fact, I did 12 Days of Christmas Cookies. It was fun and we loved having so many cookies to share. But, this year I decided to keep it simple. I am going to make a few of our favorites and try my hand at some new ones, too. That brings us to today’s recipe…Salted Caramel Shortbread Cookies.
Salted Caramel anything has to be good, right? I thought you would agree. On Sunday, I went my friend, Annette’s, annual cookie swap. As I was going through my cookie recipes deciding what to take, I kept thinking of two things: salted caramel and shortbread.
I love shortbread cookies because they are so simple, and so yummy. Last year for the swap I made Butter Pecan Shortbread. I wanted to keep on that theme of shortbread, but add a sassy bit of caramel. It wasn’t until I found THE recipe, that I decided that a drizzle of chocolate would be good thing, too. The recipe I decided to go with with is from Betty Crocker. Who better to to trust with a good recipe than Betty Crocker, right? Her recipe for Salted Caramel Shortbread Cookies does not disappoint. In fact, these cookies may just make your day!
