Two weeks ago, I was sitting on the beach in Miami with some of my favorite girlfriends. We spent a long weekend exploring Miami, eating good food, laughing an awful lot and drinking a few mojitos. We had coconut mojitos, strawberry mojitos, pineapple mojitos and even classic mojitos.
The Mojito is a classic Cuban cocktail made with white rum, sugar (or simple syrup), fresh mint leaves and topped with soda water. Let me tell you, the mojitos I had in Miami were the most delicious and refreshing I have ever had. Maybe it was because I was on vacation and with people I really enjoy. I just know they were so yummy! So, when I got home, I couldn’t wait to try making my own.
I decided to make Strawberry Mojitos, using the strawberry simple syrup I made for these Strawberry Cream Sodas. They turned out to be amazing! They were almost as good as the ones I had in Miami.
Here’s the recipe:
Strawberry Mojitos
- 2-3 slices of lime
- 1 small strawberry sliced
- 6-8 mint leaves
- 1 oz strawberry simple syrup
- 1.5 oz white rum
- club soda
Place the lime, sliced strawberry and mint leaves in a glass. Muddle with a muddler or a spoon until leaves are bruised and fragrant. Top with simple syrup and rum. Stir. Fill glass with ice and top with club soda. Garnish with a sprig of mint and a sliced of strawberry.
