Are you ready for this? I found a way to cook green beans that will blow your mind and your taste buds AWAY! No lie.
I had a bunch of fresh green beans and was getting them prepped to cook in my usual way. This way consists of cooking them in water or broth. Sometimes I cook them just a little so they are still crisp, and sometimes I cook them to death. It just depends on how I want my beans that day.
But as I was washing these, I thought of asparagus. Actually, I was wishing I had asparagus instead of green beans. One of my favorite ways to cook asparagus is to roast it. So, I had a lightbulb moment with the green beans. Why not roasted green beans? I decided to try it.
I may never cook them any other way again. A few simple ingredients: green beans, garlic, olive oil, salt, pepper and a little grated parmesan. Then 10-15 minutes in a really hot oven and boom…yummy roasted green beans.

Ingredients
- 1 lb of fresh green beans, washed
- 1-2 Tbsp of olive oil
- 2 cloves of garlic
- coarse salt, to taste
- ground pepper, to taste
- fresh parmesan cheese, grated
Instructions
- Wash beans and trim off any stems. Dry them well. Preheat oven to 450 degrees. Line a baking sheet with parchment paper.
- Chop garlic. Place beans and garlic on the baking sheet. Drizzle with olive oil and stir to coat beans. Season with salt and pepper.
- Roast for 10-15 minutes. Remove from oven and add freshly grated parmesan cheese.
