Monday was National Margarita Day. I don’t usually keep up with these kinds of days, but things like donuts, wine and margaritas do make me want to celebrate, no matter how ordinary the day. When I saw that it was a day to celebrate margaritas, I had to jump in and make some peach margaritas.
I was already using peaches in a product photo session for a client who makes jewelry. So, when I was done shooting, I turned some of those peaches into a yummy, coral colored peach simple syrup.
I have been on a bit of a simple syrup kick lately. Recently, I made a strawberry simple syrup I used to make these Strawberry Cream Sodas and these Strawberry Mojitos. Simple syrups are easy to make and can be used for so many things like cocktails, desserts and even quick refreshing sodas.
This recipe for peach margaritas is perfect for sipping and for sharing with good friends over some chips and guac. You can celebrate National Margarita Day every day.
Here’s the recipe:
Peach Margaritas
- salt for rimming glass
- Juice of 1/2 of a fresh lime
- .5 oz triple sec
- 1 oz peach simple syrup (recipe below)
- 1.5 oz silver tequila
- slice of lime
- slice of fresh peach
- club soda
Rim a rocks glass with salt. Fill with ice. Add lime juice, triple sec, tequila and simple syrup. Stir. (You can also put all of this into a shaker with ice and give it a nice shake.) I like to top with a little splash of soda, but that is totally up to you. Garnish with a slice of lime and a slice of peach. Makes one drink.
Peach Simple Syrup: In a sauce pan, combine 1 cup of sugar, 1 cup of water and 2 peaches, pitted and thinly sliced. Bring just to a boil and then simmer until peaches are soft and sugar is dissolved. Remove from heat and let it steep for about 30 minutes. Strain.
