This year, I have rekindled my love for running and have started getting back in to a running routine. It feels really good to be back at it. My running partner and I run a couple of times a week and we meet up at dark thirty so we can get our run in before the day gets hectic. Before a run, I like to have a cup of coffee and a little bite to eat. Then when I come in from running, I eat again. This time something more substantial, because I am usually pretty hungry.
I don’t like to have to do a lot of preparation on weekday mornings, so I usually have yogurt, fruit and granola or cereal. Lately, I have fallen in love with overnight oats. I used to love to make this several years ago, but it kind of fell off my radar until I saw this recipe for Peanut Butter Overnight Oats from the Minimalist Baker. I tried making my own version and instantly renewed my love for overnight oats.
What’s not to love? It’s almost magical. You mix these few wholesome ingredients in a bowl, let them marinate overnight and the next day you have super creamy, sweet and peanuty goodness. I combined almond milk, old fashioned oats, natural peanut butter, chopped apples and maple syrup. Leaving it in the fridge overnight results in a tasty concoction that will leave you wanting to lick the bowl.

Ingredients
- 1/4 cup old fashioned oats
- 1/2 cup almond milk (or any other milk you like)
- 1 TBSP natural peanut butter (or almond butter, sunbutter, etc)
- 1/2 of an apple chopped
- 1-2 TSP of pure maple syrup
Instructions
- In a bowl, combine the oats and almond milk. Top with peanut butter, apples and maple syrup. Stir to combine. I like to leave the peanut butter kind of chunky and not quite mixed in.
- Cover bowl and place in fridge for 6 hours or overnight. Remove from fridge and eat. I like to eat it cold, but you can heat it too, if you prefer.
- *Note: I put the cook time for 6 hours, but that's really the time it spends in the fridge.
