Vegetarian tacos that are a breeze to make and oh, so tasty to eat? Yes, please! This taco recipe includes a simple black bean mixture with onions, lime, jalapeño and taco seasoning. Easy Black Bean Sweet Potato Tacos are a taco lovers dream come true.
Yesterday was Tuesday, Taco Tuesday to be exact. We don’t always have tacos on Tuesday, but lately it’s become a thing for our family. It is fun to experiment with different kinds of taco fillings such as chicken, pulled pork and different cuts of beef. This week, I made these amazing black bean and sweet potato tacos.
I made this recipe once for some vegan/vegetarian friends and I fell in love. It’s a really simple recipe. The hardest part is remembering to cook the sweet potato ahead of time. I like to cook 3 or 4 at a time on the weekend. Then I eat them for lunch or sometimes even breakfast throughout the week. If you forget, you can always microwave a sweet potato, but I never have great luck with that.
After the sweet potato is cooked and cooled, the rest is super fast. Cook down some onions, add a can of black beans, some jalapeño, and a couple of teaspoons of homemade taco seasoning (or store-bought, no judging) and simmer for about 10 minutes. Add cubed sweet potato and heat until warmed through.
Then, serve the filling in warm corn tortillas with toppings like cilantro, greens and avocado. Served like that, I am pretty sure these Easy Black Bean Sweet Potato Tacos are a vegetarian and even vegan dream come true. Feel free to add sour cream, salsa and the usual cast of taco topping characters.
Ingredients for homemade taco seasoning
Make a big batch of taco seasoning and store it in an airtight jar. That way, when taco cravings hit, you have plenty of seasoning on hand. Here are the ingredients you will need:
- 1 TBSP of chili powder
- 1 TBSP of cumin (sometimes I do 2 TBSP because I love the flavor of cumin)
- 1 tsp of Kosher salt
- 1 teaspoon of black pepper
- 1/2 tsp of paprika
- 1/4 tsp of garlic powder
- 1/4 tsp of onion powder
- 1/4 tsp of red pepper flakes
- 1/4 tsp of dried oregano

Ingredients
- 1 medium sweet potato
- 1 tbsp of olive oil
- 1 small onion, chopped
- chopped jalapeño, I used pickled
- 1 can black beans, undrained
- juice of one lime
- 2-3 tsp of homemade taco seasoning (see recipe below)
- corn tortillas
- fresh cilantro
- avocado
- greens
- lime
Instructions
- To make taco seasoning: Combine 1 TBSP chili powder, 1 TBSP cumin, 1 tsp salt, 1 tsp black pepper, 1/2 tsp paprika, 1/4 tsp each: garlic powder, onion powder, red pepper flakes and oregano. Store in an air-tight container.
- Preheat oven to 400 degrees. Wash sweet potato and prick it several times with a fork. Wrap it in foil. Bake for 45 minutes to 1 hour, until tender. Let cool to room temperature. I usually bake these a day or two ahead of time and keep them in the fridge.
- In a small pan, drizzle olive oil and heat to medium. Saute onions until tender. Add jalapeño and cook another minute. Add beans, taco seasoning and lime juice. Simmer for 10-15 minutes. If mixture is too thick, add a tiny bit of water.
- Peel and chop sweet potato into small cubes. Add to beans and cook until sweet potatoes are heated.
- Served in corn tortillas with avocado, cilantro and greens. Garnish with a lime wedge.
