With Earth Day coming up next week, I thought it would the perfect time to share this delicious Watermelon Coconut Green Smoothie. There are so many benefits to getting more plants into your diet. It’s great for your body but it’s also great for our planet.
Food and nutrition experts say we should eat 5-9 servings of fruits and vegetables daily. For most people that equates to about 4 to 4 1/2 cups every day. If you have a hard time getting all of those servings in, a green smoothie great way to get more fruits and veggies in your body.
You can make green smoothies with so many great ingredients. One of my favorites is this Kale Smoothie I posted awhile back. For that smoothie, I used bananas as the base fruit. But for today’s recipe, I changed it up and used frozen watermelon chunks. Watermelon gives a sweetness and freshness that makes this green smoothie really tasty.
I also used coconut milk. One, because I had some and two, because I LOVE coconut. Can we say Piña Coladas? Can we say Coconut Pie? Coconut yogurt? Coconut cake? You get the idea. I love coconut. The end. It helps to make this smoothie incredibly creamy.
For the green part, I incorporated lots of spinach. I’m talking several big handfuls. And I added a few mint leaves. You can switch these out for your favorite greens: kale, beet greens, carrot tops, etc. I think spinach works well because it is so mild. The watermelon and coconut flavors aren’t masked at all.
I like adding some protein to my green smoothies. I find that doing that make me full longer and gives me an added protein boost first thing in the morning. I added protein powder, but you could also use plain Greek yogurt.
The watermelon, coconut milk and greens are key components of this green smoothie, but the rest you can taylor to your liking.
Watermelon Coconut Green Smoothie
- 2 cups of cubed watermelon chunks, frozen
- 1 cup of coconut milk
- mint leaves
- 3-4 handfuls of fresh spinach (or other greens)
- 1 sccop of good protein powder (optional)
- Ice
- lime wedges
In a blender, combine frozen watermelon chunks and coconut milk. Blend until smooth. Add mint and spinach. Blend until leaves are completely incorporated. Add protein powder. Blend again. Then add 1-2 cups of ice and blend to your desired consistency. Pour into glasses and add a squeeze of lime. This recipe make 2 generous smoothies or four small ones.
