You might have noticed that I am currently crushing on fresh peaches. The peach is such a fun and tasty fruit to use in cocktails. I recently made these Peach Margaritas and this White Peach Sangria. But today, I will blow your mind with this Honey Peach Mojito recipe.
I was inspired to make this cocktail by that sweet little honeycomb plate my friend, Elizabeth, made and by some fresh Georgia grown peaches I found at the grocery. I thought I would try replacing the simple syrup in a mojito with raw honey. Mixed with the sweet-tart of the peaches, honey is the perfect flavor for this drink. It’s still light and refreshing like most mojitos, but it has a bit of depth and richness.
While I was researching this drink, I found a fun story! The Waldorf Astoria in New York City has a rooftop produce garden and six beehives. They use honey from the hives in recipes such as their homemade Honey Ice Cream and they use the honey in several of their famous cocktails.
Honey is the original simple syrup. There are many ways to use it in making cocktails. You can use it straight up or thin it with warm water if it’s too thick or heavy for your liking. Since I was adding a lot of club soda to this mojito, I did not thin out the honey.
I muddled some peach slices and mint in my glasses, drizzled in the honey and poured in some white rum. Then, I gave them a good stir, added ice and topped them off with soda. One more stir and they were ready to drink.
For garnishes, I made some fun skewers with peach slices and mint leaves. I served these Honey Peach Mojitos on an old sliver tray with some of my favorite Buffalo check napkins from Dot & Army.

Ingredients
- 2-3 slices of very ripe peach
- 6-8 mint leaves
- 1 TBSP raw honey
- 1.5 oz white rum
- club soda
Instructions
- Place the peach slices and mint leaves in a glass. Muddle with a muddler or a spoon until leaves are bruised and fragrant. Top with honey and rum. Stir well. Fill glass with ice and top with club soda. Garnish with a skewer of peach slices and mint leaves. Makes one cocktail.
