Ready to make three delicious simple syrup recipes?
I have a little book that was published in the 1940’s called The Standard Cocktail Guide by Crosby Gaige. I found this book last year when we were going through my Grandmother’s house for the last time. I love this book for many reasons, cocktail recipes notwithstanding. I love that it outlines what every well-stocked bar needs in addition to liquor, of course. One of the things on his list is simple syrup because it “blends easily with your cocktail ingredients and results in a smoother, better flavored drink.” I could not agree more.
I am a big fan of using and making simple syrups. Sure, you can buy a bottle of simple syrup at the grocery or liquor store, but it really is super easy to make. And, if you have just a few minutes and some fresh fruit or herbs on your hands, you can make infused simple syrups that will kick your drinks up a notch.
I’m not sure if they call it simple syrup because it’s easy to make, but it truly is. Dictionary.com defines it as “a thick, sweet liquid, usually prepared from sugar and water and used chiefly as a base for soda fountain flavors.” Making refreshing sodas was my chief purpose for preparing this trio of syrups: vanilla syrup, grapefruit syrup and blueberry syrup.
Making Simple Syrups
For all three syrups, I started with a simple formula, mixing sugar and water 1:1. I brought this mixture to a boil just long enough for the sugar to dissolve. Then I added the fruit or flavoring and let it steep for about thirty minutes. I strained them and let cool to room temp. There you go! Flavored simple syrups that you can keep in the fridge for 2-3 weeks. Use these syrups for making sodas like I did here, or use them in cocktails, drizzle them over ice cream, cake or waffles. They really are versatile little gems to have on hand.
To make sodas, just add a little syrup to a glass filled with ice and then top with club soda. Give it a stir. That’s it. They really are so fresh and lovely to sip on. From these syrups I made grapefruit soda, blueberry soda and vanilla soda. You could even get crazy and make blueberry grapefruit soda or vanilla blueberry soda. There are tons of tasty possibilities. Whether you are making mocktail recipes or cocktail recipes, these simple syrups will make your concoctions taste SO good.

Ingredients
- 1/2 cup water
- 1/2 sugar
- 1/2 cup of fresh or frozen blueberries
- 1 TBSP grapefruit zest
- juice of one grapefruit
- 1 tsp real vanilla extract
- Club Soda
Instructions
- Combine sugar and water in a small saucepan. Bring to a boil.
- When sugar is dissolved, lower to a simmer.
- Add 1/2 cup of blueberries. Simmer for five minutes and then let steep for thirty minutes.
- Add grapefruit zest and juice. Simmer for five minutes and then let steep for thirty minutes.
- Add vanilla extract. Simmer for five minutes and then let steep for thirty minutes.
- Let syrup cool, then store in the refrigerator until ready to use.
- Fill a glass with ice. Add 1 oz of simple syrup. Top with club soda. Stir and enjoy!
