Oh, you are in for a treat today! This recipe for Pineapple Ginger Basil Punch will be a regular star in your cocktail repertoire. It contains a variety of fun flavors: sweet pineapple, spicy ginger, savory basil and tangy lime. It’s full of bold tastes that blend together seamlessly to make a fresh drink that is sure to please. Then, you top it all off with club soda to give this punch a bubbly burst.
This summer I have been obsessed with fresh basil. I put it in salads. I throw it on sandwiches. I add it to salad dressings. You name it, I have probably tried to put basil in it. So why not use it to spruce up a cocktail? Genius, right?
I have made other cocktails with ginger simple syrup. I paired it with pear juice in this Pear and Ginger cocktail. It’s an easy syrup to make and can be used for so many things. Sometimes I even add it to club soda to make my own ginger ale. It adds a little spicy kick to this Pineapple Ginger Basil Punch.
I have included the recipe for a pitcher of this lovely pineapple-y yellow drink so you make it for one or make it for a crowd!

Ingredients
- 1.5 ounces vodka
- 3 ounces pineapple juice
- .5 ounce ginger simple syrup
- 2-3 fresh basil leaves
- .5 ounce lime juice
- club soda
Instructions
- Ginger Simple Syrup: In a small saucepan, combine 1 cup of sugar, 1 cup of water and 1 cup of sliced fresh ginger (about a 4" piece that has been peeled and sliced). Bring to a boil and reduce to simmer until all the sugar is dissolved. Remove from heat. Let it steep for about 15 minutes. The longer it steeps the stronger the ginger flavor. Cool completely and store in the fridge.
- To make the cocktail: Combine vodka, pineapple juice, ginger syrup, basil leaves and lime juice in a mixing glass, Stir well to combine. Pour over ice and top with club soda. Makes one cocktail.
- To make a pitcher: In a large pitcher combine 5 cups of pineapple juice, 2 cups of vodka, 1 cup of ginger simple syrup, 1 cup of lime juice and 1 cup of fresh basil leaves. Stir well and chill. When ready to serve, pour into ice-filled glasses and top with club soda.
