Oh man! Today’s cocktail recipe caught me by surprise. After a party we hosted last weekend, we ended up with a quite a few bottles of Mike’s Hard Lemonade in our fridge. Mike’s Lemonades are fun all on their own, but, you know me, I had to figure out a way to kick it up a notch.
I started looking around the interwebs for cocktail recipes made with Mike’s and I was amazed at the recipes out there! There are tons of Pinterest boards dedicated to making drinks and all sorts of other things with Mike’s Hard Lemonade. There are Mike-a-ritas, Mike’s Hard Palmers and even Boozy Ice Cream Floats made with Mike’s. That’s just the tip of the iceberg! There are even cake recipes using Mike’s.
So, I got to thinking…what if I made my favorite cocktail, the Paloma, with Mike’s as the fruity and soda-like ingredient? My usual Paloma is made with tequila, pink grapefruit juice, lime juice and club soda or lime La Croix. It made sense that Mike’s would make an outstanding substitute for the fruit juice and the soda. And it does!
The resulting beverage is a fizzy, tequila cocktail with a sweet and sour bite. The fun thing about this drink is your guests can customize their own with their favorite flavor. You can buy a variety pack of Mike’s, so it makes it easy to please everyone.
These Palomas go perfectly with the Mushroom & Arugula Quesadillas I posted earlier this week. Together they make a fun happy hour combination. What are some of your favorite cocktail and small bite combos? Leave me a message in the comments. I’d love to share your ideas in future posts. Cheers!
