It’s hard to believe that Thanksgiving is over and December is just one day away. I feel like it was “just” Christmas and here it is all over again. That’s okay with me because I love the holidays. The food, the drinks and the fun with family and friends make it a magical time of year.
Over the next couple of weeks, I am going to share easy to prepare appetizers and some classic cocktails. Any of my happy hour snacks would make great bites to take to your holiday gatherings, but these three that I am highlighting are simple to make, beautiful to present and most importantly, mighty tasty. So, here’s my lineup of holiday appetizers: Prosciutto Wrapped Asparagus (with a Creamy Horseradish Honey Mustard Dip), Caprese Skewers with Basil Vinaigrette, and Black Bean Dip Bites.
This week, I am sharing the recipe for Prosciutto Wrapped Asparagus. I love the combo of roasted asparagus with crispy prosciutto. When you add a yummy dip like Creamy Horseradish Honey Mustard Dip, it’s the perfect small bite. The asparagus is simply flavored with olive oil and fresh ground pepper and the dip is a swirl of yogurt, horseradish, mustard and honey with a dash of fresh dill.
I like to present the wrapped spears on a wooden tray with each bundle laid out single file. This makes it easy for guests to pick up and makes a lovely display as well. Stay tuned for more delicious bites and some classic cocktails…all designed to help make your holiday spirits bright!
Ingredients
- 1 lb fresh asparagus
- 1/2 lb thinly sliced prosciutto
- 2 T olive oil
- Fresh ground pepper
- 3/4 cup whole milk yogurt
- 1/4 cup horseradish mustard
- 1 T yellow mustard
- 3 T honey
- /12 tsp salt
- 2 T white vinegar
- 1-2 tsp fresh dill, chopped
Instructions
- Make the dip: Combine yogurt, horseradish mustard, yellow mustard, honey, salt, vinegar and dill. Whisk until smooth. Refrigerate until ready to serve.
- Pre-heat oven to 400 degrees.
- Wash and trim asparagus. Cut each piece of prosciutto in half. Wrap each asparagus spear in a piece of prosciutto. If you have small, tender spears, you can bundle 2 or three together in one piece of prosciutto. Place wrapped asparagus on a parchment lined baking sheet.
- Brush the bundles with olive oil and sprinkle with fresh pepper.
- Roast for 15-18 minutes until prosciutto is crispy.
- Serve with dip.
