First off, let me preface this post by saying: I am not, nor have I ever been a bartender. At least, not in this lifetime. I simply love cocktails, especially in the context of sharing them with other human beings. Happy hour brings people together and I am all about that.
So, as you try my recipes, feel free to experiment. I don’t have any hard and fast rules. I don’t use a specific cocktail guide. Rather, when I think of something I want to create, I look at quite a few similar recipes and then, I craft my own.
Today’s cocktail is a recipe where I did just that. I recently made this great peach shrub vodka cocktail that I call a Peach Shrub Vodka Fizz. One of my favorite blog posts ever and one that people still ask me about was my Blackberry Vodka Fizz that was published almost exactly a year ago. I do love a fizzy drink and when you throw in fruit and mint, life becomes just about perfect.
This time, I combined the fizz with a peachy shrub. I have been wanting to make a shrub for awhile. In the food world, a shrub is a drinking vinegar, a syrup made with fruit, sugar, and vinegar. Want to know more about shrubs? Alton Brown has a great little video about them.
I made my shrub using the cold method, meaning I combined the fruit and sugar and let it macerate in the fridge for several days. Then I strained it and added the vinegar. The resulting liquid can be used for cocktails, mocktails, salad dressings and more.
I got hooked on Kombucha when I was doing Whole 30. I came to crave that sweet and sour tang. I love it so much now that I am trying my hand at brewing my own. I will keep you posted on how that turns out.
I haven’t gotten brave enough to make a cocktail using Kombucha, but this shrub is a nice substitute for that zing! Try making your own shrubs out of your favorite fruits and let me know what you think in the comments. Cheers!
Ingredients
- 1 lb. fresh peaches, plus one or two extra for garnish
- 1 cup granulated sugar
- 1 cup white balsamic vinegar
- 2 ounces vodka
- 2 ounces peach shrub
- Club soda
- Peach slices
- Mint leaves
Instructions
- Wash, peel, and remove pits from peaches. Cut into quarters.
- In a bowl, cover fruit with the sugar and stir to combine. Gently crush fruit to begin the macerating process. Cover bowl and place in refrigerator for at least 48 hours.
- After 48 hours, strain the mixture thru a fine mesh sieve. Press fruit to get all the liquid out.
- Add vinegar to the resulting syrup and mix well. Pour into a glass jar and store in fridge for up to 6 months. The shrub will become more mellow as it ages.
- Fill a tall glass with ice.
- Add vodka, shrub and mint leaves.
- Stir gently.
- Top with club soda.
- Garnish with peach slices and additional mint.
