Spring is almost here! So that means that Easter is right around the corner. I came up a cocktail that’s Easter egg ready: a Nectarine Rosemary Gin Flip!
The first Flips were hot drinks made with beer, rum, and sugar, heated with a hot iron poker. But, now most Flips are made cold and they contain a mix of syrup, spirit, and egg. My Nectarine Rosemary Gin Flip contains a nectarine and rosemary simple syrup, gin and an egg white. When all three of these things are mixed together, it makes brisk, frothy cocktail that is perfect for Spring’s still-chilly evenings.
As you know I am a huge fan of making simple syrups. I have made strawberry simple syrup, cinnamon simple syrup, and grapefruit simple syrup. The nectarine and rosemary simple syrup is easy to make and will keep in the fridge for weeks. Simple syrups are simply a 1:1 ratio of water and sugar. The mixture is heated until the sugar dissolves and then other flavors can be added in. Fruit is my usual addition, but you can also add spices and herbs.
For this cocktail, I combined the syrup, gin and an egg white in a shaker. I gave it a shake for about 30 seconds. Then I added ice to the shaker and shook it again for about 30 seconds. The result is this beautiful, frothy gem of a cocktail. Add a garnish of fresh rosemary and you have a drink that is almost too pretty to drink. Cheers!
Ingredients
- 2-3 nectarines, peeled and chopped
- 1 cup sugar
- 1 cup water
- 1 large sprig of fresh Rosemary
- 1.2 ounces Nectarine Rosemary Simple Syrup
- 2 ounces Gin
- 1 fresh egg white
Instructions
- To make the syrup, stir together the sugar and 1 cup water in a medium saucepan set over medium-high heat. Bring to a boil, stirring occasionally until the sugar is dissolved.
- Add nectarines and boil for about 3 minutes. Remove from heat.
- Add in rosemary sprig. Let mixture steep for 30 minutes.
- Strain with a mesh strainer. Discard solids. Allow syrup to cool to room temperature and then refrigerate until you are ready to make cocktails.
- Add syrup, gin and egg white to a shaker.
- Shake for 30 seconds and then add ice to shaker
- Shake again for 30 seconds or until frothy.
- Strain into a chilled coupe glass.
