Juicy citrus like Ruby Red grapefruit and Cara Cara oranges are the perfect brightness to add to salads like this Citrus Salad with Nuts and Orange Mango Vinaigrette. The hint of warm weather calls me toward lighter meals. This salad has been a staple for a few weeks. It’s quick to prepare and only contains a handful of ingredients: red onion, citrus fruit slices, organic salad greens and nuts.
I used Cara Cara oranges because I am obsessed with them right now. They may look like ordinary navel oranges on the outside, but inside, their flesh is pink-ish and they taste like heaven. To me, it’s almost like a mix between a pink grapefruit and an orange. They are also seedless, which makes them a snap to serve in salads. Cara Caras are generally available from December to April. So if you can’t find them for this salad, feel free to substitute your favorite citrus. I think pink grapefruit would be a natural replacement.
