There isn’t a whole lot better in life than a toasted cheesy sandwich. While I am completely happy with a basic grilled cheese, I decided to get a little fancier and create this Bacon Avocado Grilled Cheese. I mean, could there be a better combo than crispy bacon, creamy avocado and a little heat from pepper jack cheese? I think not.
There’s really nothing to making these babies. You cook up some bacon slices, grab some butter (room temperature is best), a few slices of bread, a couple of avocados, and some slices of pepper jack cheese. I used English muffins because that’s what we had on hand, but any good bread will do.
Then, you heat up a iron skillet (or two) or a panini press, if you have one. Layer on the ingredients beginning and ending with the cheese. Butter the outside of the sandwich and then toast it in your pan or press. I say two skillets because sometimes, I heat up two of them. I put the sandwich in one and then put the other right on top to press the sandwich down. It makes sort of a rustic sandwich press.
Cook each sandwich until the outsides are nice and crisp. Then, serve them up! I cut mine into bite sizes if I am making them for appetizers. But, a whole one makes a generous serving for a meal. Add a little salad or fruit on the side and there you have it.
Bacon Avocado Grilled Cheese
Ingredients
- 8 slices of bread
- 2 avocados sliced
- 4 slices of pepper jack cheese or 8 if your bread is large
- 5-6 slices of bacon cooked
- butter room temperature
Instructions
- Heat an iron skillet to medium heat. If using a panini press, follow the manufacturers guidelines.
- Layer ingredients on a slice of bread, beginning and ending with cheese. I cut my cheese slices in half so that I would have half on the bottom and half on the top. Then top with another slice of bread.
- Spread butter on the outsides of each slice of bread.
- Place the sandwich in the pan and cook until the bread is slightly browned. Then flip to the other side.
- Serve warm.
