Memorial Day Weekend is the unofficial start of Summer. School is out here. The weather is warm and it’s time to sit back, relax and enjoy some good old-fashioned Summer fun.
Popsicles are one of my favorite things to make and eat right now. I was super excited when Natalie’s Juices asked me to create a recipe for popsicles using their Pomegranate White Tea. I have been dying to try to make multi-layered pops, so I thought this would be the perfect time to try develop Red, White and Blue Popsicles!
One of the great things about these popsicles is they are made with fresh strawberries and blueberries, Natalie’s handcrafted, preservative-free juice and Greek yogurt. So you will feel great about giving them to your kids, even for breakfast. They make a really fun dessert for adults, too.
Making tri-colored popsicles, takes a little bit of planning, but after the first time you do it, you’ll find it becomes easier each time. I made the red layer by blending strawberries with Natalie’s Pomegranate White Tea. I divided the puree into 10 3 ounce molds. I use these popsicle molds. Then I put the mold into the freezer and let it hang out for about an hour. I added the sticks, then let the layer freeze completely.
Next, I added vanilla Greek yogurt to each mold and let it freeze solid. Finally, I blended blueberries with the juice and topped off the molds with the resulting puree. I let the pops freeze for about two hours. Then they are ready to enjoy. Run a little warm water over the outside of the molds to loosen the popsicles.

Red, White and Blue Popsicles
Ingredients
- 1 cup blueberries
- ½ cup Pomegranate White Tea
- 1 cup strawberries or raspberries chopped
- ½ cup juice
- 1 1/2 cups Vanilla Greek yogurt
Instructions
- Blend blueberries with ½ cup juice until smooth. Pour into popsicle molds,distribute evenly. Fill about 1/3 of each mold. Place mold in freezer for an hour. Add sticks to molds. Freeze for another hour.
- Add Greek yogurt to molds. Filling each mold another 1/3. You may have some yogurt left over once molds are filled. Freeze for an hour and a half.
- Blend strawberries with ½ cup juice until smooth. Pour mixture into molds, filling the last 1/3 of each mold. Be sure not to overfill because the mixture will expand when frozen. Freeze 2-3 hours.
- Run warm water over the outside of the molds to release popsicles. They can be stored in a freezer bag for up to six months. This recipe is perfect for making 10 3 oz popsicles.
