School is back in here, but grilling season is far from over. Chili Lime Chicken Skewers are so simple and tasty. Throw them on the grill for a quick dinner that everyone will love!
Hello, Friends! It’s been far too long. I took a bit of a leave of absence here on the blog this Summer. I still worked with my clients and kept that side of things going, but the rest of my time was filled with fun family trips and adventures. I am excited to get back here and share some great recipes and food stories with you though!
I developed the recipe for Chili Lime Chicken Skewers from a recipe that was a long-time family favorite. I basically just adapted the recipe from whole chicken breasts that are marinated and grilled or seared in a skillet and turned them into nice little hand-held skewers. I mean, who doesn’t love food on a stick?
And, can we say EASY?! All of the work, if you really want to call it that, is done up front. Soak the skewers so they don’t burn. Slice and marinate the chicken. You can do both of those things starting the morning or night before. Then when it’s time to grill, you just thread the chicken on the skewers.
Serve them with a salad and some rice and dinner is served! I got a little “fancy” with my rice by tossing cooked rice with a bit of olive oil, some chopped fresh cilantro, and fresh lime juice. There are plenty of sides that work with this though. You can do apple slaw, broccoli salad, pasta salad, or fresh fruit. That’s the beauty of Summer suppers! So many times this Summer, I have just sliced up cucumbers and tomatoes to go with a grilled meat dish. Almost zero prep work!

Chili Lime Chicken Skewers
Ingredients
- 1/4 cup olive oil
- Juice of one lime
- 3-4 cloves of garlic chopped
- 1/2 small red onion thinly sliced
- 1/4 cup cilantro chopped
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp coarse salt
- 1/2 tsp ground back pepper
Instructions
- Soak wooden skewers in water for at least an hour. Longer is better. This keep them from burning on the grill.
- Combine olive oil through black pepper in a large glass bowl. Stir well.
- Cut chicken into long thin slices, about 1/2 inch wide. Toss chicken into marinade and set in the refrigerator for at least an hour.
- Heat grill to high. Grill the skewers 3-5 minutes per side, until the chicken is fully cooked.
- Serve hot.
