S’mores become a year-round treat when you make them in the oven. I kicked them up a bit with a seasonal touch. Oven S’mores with Roasted Strawberry Jam are a delight you are going to want to make today!

I missed National S’mores Day by a few days. Dang it! Well, that’s not stopping me from sharing this recipe for show-stopping Oven S’mores with Roasted Strawberry Jam. Did you read that?

Yep. I know you may need a minute to process. Strawberries pair with chocolate like peanut butter and jelly, Mutt and Jeff, Champagne and just about anything. You get the picture.

So, I decided why not pair roasted strawberry jam with s’mores? It’s a natural connection for sure. The jam is so simple to make with just 3 ingredients and a little over an hour of your time. Sugar, strawberries and fresh lemon juice are combined and roasted in the oven to make a delicious, syrupy treat that’s not only great on these s’mores but could also be drizzled on buttery biscuits, crispy waffles and so much more! After you make the jam and let it cool, the s’mores come together so quickly. Layer graham crackers, chocolate, jam and large marshmallows on a parchment lined baking sheet. Pop the sheet in the oven that’s pre-heated to 350 degrees and bake until the marshmallows become puffed and a little golden. If you are brave, you can do this under the broiler. But, the broiler for me always equals disaster. I walk away for one second and the food burns. But, if you are watchful and not highly-distractible like me, give the broiler a shot. Your marshmallows will get a more toasted texture for sure.

For this recipe, I used gluten-free graham crackers and dark chocolate chips because I had them on hand. Feel free to substitute your favorite graham crackers and chocolate. I guarantee your crew (or just you, even) will gobble up these tasty goodies!

Ingredients

For the Jam

  • 2 lbs of fresh strawberries washed and topped
  • 1 lemon juiced
  • 2 TBSP of sugar

For the S'mores

  • Graham Crackers I used gluten-free
  • Chocolate of your choice
  • Roasted Strawberry Jam
  • Marshmallows

Instructions

To make the jam:

  • Toss whole strawberries with the juice of one lemon and sugar. Let sit for 10 minutes and stir again.
  • Preheat oven to 300 degrees. Pour strawberry mixture onto a parchment lined baking sheet.
  • Slow roast the strawberries for about an hour. Stirring every 15 minutes. Jam will be ready when the mixture is syrupy and has darkened. This may take more or less time, depending on your oven.
  • Pour strawberry jam into a bowl and let cool to room temp. Refrigerate once cooled and store for up to 2 weeks.

To make s'mores:

  • Line a baking sheet with parchment paper. Preheat oven to 350 degrees.
  • Place graham crackers on the baking sheet in one layer leaving space between the crackers.
  • Layer chocolate, jam and marshmallows on top of the graham crackers.
  • Bake until marshmallows are puffy and toasted.
  • Remove pan from oven and top each stack with another graham cracker. Press down gently to form a sandwich of goodness. Serve immediately.
