I am always looking for new ways to squeeze more raw veggies into my diet. If you know me, you know I am a huge fan of salads that I can make ahead of time and pull out when it’s time to eat. This Cauliflower Salad with Grapefruit Vinaigrette is a yummy way to make healthy choices!
Cauliflower seems to be all the rage right now, as people are using it to replace rice, potatoes and even pizza crust. Now, I have not jumped on board with the pizza crust idea (yet), because pizza is sacred around here. But, I can definitely get down with some cauliflower rice or mashed cauliflower. Since cauliflower is so popular, I decided to come up with a recipe for where it’s used raw. Most people associate raw cauliflower with veggie trays and ranch dip. I’m not judging you at all. Give me a plate of veggies and good ranch and I would be a happy lady. But, here, I decided to go in a different direction. I combined the goodness of thinly cut crisp cauliflower, red cabbage and green apples with the crunch of walnuts and tang of green onions. Then I tossed everything together and dressed it with a homemade Grapefruit vinaigrette.
This salad comes together in a jiffy and can be kept in the fridge for a couple of days. Serve as a side dish. Or even more, top with roasted chicken to make a one bowl meal.

Cauliflower Salad with Grapefruit Viniagrette
Ingredients
For the dressing:
- 1/2 cup olive oil
- 1/4 cup Apple Cider vinegar
- 1/8 cup Grapefruit juice
- Juice of one lime
- 1/2 tsp dry mustard
- 1/2 tsp salt
- 1/2 tsp pepper
For the salad
- 1/2 head of cauliflower sliced very thin
- 1/4 head of red cabbage sliced very thin
- 2 Granny Smith apples sliced very thin
- 3 green onions chopped
- 1.2 cups walnuts
Instructions
- In a jar with a tight fitting lid, combine dressing ingredients. Shake until well combined.
- In a large bowl or on a large platter, combine salad ingredients.
- About 30 minutes before serving, toss salad with a small amount of dressing (about a 1/3 of a cup) to start. Add more dressing as desired.
- Serve immediately.
