Spring is coming. The buds on the trees and the early blooms of forsythia and quince are Mother Nature’s way of announcing that Spring is right around the corner. To me, that signals the beginning of the growing season, the promise of fresh herbs and Spring vegetables.
I developed this recipe to marry the flavors of winter’s citrus with the earthy punch of fresh Thyme. I folded all of this into a variation of the classic Moscow Mule recipe.
The key to this Grapefruit Thyme Moscow Mule is the pop in your mouth flavors of ginger, grapefruit and fresh thyme. I don’t know about you, but I love botanical based cocktails. They always give off a garden freshness and lightness.
Included in this recipe: the freshest juice from Natalie’s, a yummy Ginger Beer from Fentiman’s, a touch of fresh lime, a thyme simple syrup and really good vodka.
How to make a Grapefruit Thyme Moscow Mule:
This cocktail starts with a little bit of prep work, but making a simple syrup is quick and easy. If you make it early in the day, you will have plenty of thyme simple syrup for that evening’s cocktail hour and plenty left over for future drinks.
Once you have the thyme simple syrup made up, the rest of the mule comes together so quickly. Fill a copper mule mug or a tall glass with ice. Add in 2 ounces of vodka, 2 ounces of grapefruit juice, 1/2 ounce of fresh squeezed lime juice and a 1/2 ounce thyme simple syrup. Stir it up and then top with 1/2 cup of Ginger Beer.

Grapefruit Thyme Moscow Mule
Ingredients
- 2 oz good vodka
- 2 oz Natalie's Grapefruit juice
- 1/2 oz thyme simple syrup see recipe*
- 1/2 oz fresh lime juice
- 1/2 cup Fentiman's Ginger Beer
- Candied ginger garnish
- thyme sprigs garnish
- fresh grapefruit wedges. garnish
Instructions
- In a Mule mug or tall glass, combine vodka, grapefruit juice, thyme simple syrup and lime juice.
- Add ice and stir to chill.
- Top with ginger beer. Stir again.
- Garnish with candied ginger, grapefruit wedges and/or fresh thyme.
*To make Thyme Simple Syrup
- Combine 1 cup of water and 1 cup of sugar in a small saucepan. Bring to a boil, then reduce heat. Stir until sugar is dissolved. Add in a couple of thyme sprigs. Remove from heat. Let syrup steep for 20-30 minutes. Remove thyme and let it cool to room temperature. Refrigerate until ready to use.
