Day 5 of my 12 Days of Christmas cookies brings us to an old favorite of mine: Jam Thumbprint Cookies. These are an almond flavored shortbread dough with a bit of jam in the middle. I took these to a cookie swap today and people were pretty impressed!
You just mix up your dough and make them into 1″ balls. I used my cookie scoop for this. Then you make a little indentation in the middle of each one. You can use your thumb, but I used the back of a small measuring spoon dipped in sugar.
Pop them in the oven for about 8 minutes. Then take them out and fill each hole with a bit of jam. I used cherry, peach and lemon curd for this batch. I think the lemon curd is my favorite! If your indentations puff up during baking, you can gently push them back down before adding the jam.
I found the recipe for these delicious cookies over at Love & Olive Oil. The only change I made to the recipe was I used almond extract instead of vanilla.
