I always like to have a nice variety of beverages at a kid’s birthday party, but I also like to include a fun adult beverage. Owen’s Lego themed party was in late April, so I wanted something light and refreshing.
I found a tasty recipe for a white Sangria and adapted it to make a crisp, sparkly cocktail. I called it Lego City Sangria. I think it was in the “everything is awesome” category!
You combine wine, fruit, simple syrup and triple sec and let it all marinate for a few hours or more. Then you pour into glasses and top with club soda or sparkling water such as La Croix or Dasani Sparkling. The recipe is below. Give it a try and let me know what you think.

This light, crisp white Sangria is the perfect sparkling cocktail for a warm Spring or Summer day.
Ingredients
- 2 bottles Sauvignon Blanc
- 2-3 peaches
- 1 cup grapes, cut in half
- 1 Granny Smith apple, thinly sliced
- 1 lime, sliced
- 1/3 cup simple syrup* (recipe below)
- splash of triple sec
- club soda or seltzer
Instructions
- *Make simple syrup. Combine 1 cup of water and 1 cup of granulated sugar in a small saucepan. Bring to a boil and stir until sugar dissolves. Remove from heat and cool to room temperature.
- In a large pitcher, combine wine, fruit, simple syrup and triple sec.
- Chill for several hours.
- When ready to serve, pour into glasses and top with club soda or seltzer. I love using flavored seltzer such as La Croix or Dasani Sparkling.
