No matter who wins the Presidential election today, YOU will always win by serving these amazing, zingy little Bacon Wrapped Jalapeño Poppers. I mean, you can’t go wrong with bacon and my secret ingredient in these babies…pimento cheese. I know I keep repeating myself but, pimento cheese is good for so many things. It’s good on its own with crackers or in sandwiches and it’s amazing on mini-waffles and in these Bacon Wrapped Jalapeño Poppers.
Great for people who eat gluten-free and for those who like to indulge in spicy foods, this recipe for jalapeño poppers includes just three ingredients: fresh jalapeños, bacon and pimento cheese. There a few small batch Pimento Cheese makers that I highly recommend. One is Proper Pepper Pimento Cheese and the other is Palmetto Cheese. If you make your own pimento cheese, then you’ll need a few more ingredients, but I promise it’s worth it.
Once you have your ingredients, putting these cocktail snacks together is a cinch. You slice the jalapeños lengthwise and remove the seeds. If you have never done this before, be sure to wear gloves when doing this. The seeds and veins are where the jalapeño packs the heat. After, the seeds are out, scoop about a tablespoon of pimento cheese into each pepper half. Then wrap each one in a half slice of bacon. Ingredients
- 12 fresh jalapeños
- 8 oz of Pimento Cheese
- 12 slices of good bacon, halved
Instructions
- Preheat oven to 400 degrees.
- Slice each jalapeño lengthwise and remove the seeds and veins.
- Fill each jalapeño half with about a tablespoon of pimento cheese.
- Wrap each jalapeño half with bacon.
- Bake on a parchment lined baking sheet for 20-25 minutes or until bacon is crisp. Serve immediately. These can be re-heated, too.
