Let’s start our weekend with chocolate and peanut butter. Okay? These Easy Peanut Butter Cups {Vegan} come together so quickly that you won’t believe it. Containing only 5 ingredients, this recipe is probably one of the best vegan recipes I have tried.
Even if you aren’t vegan, you will love them. I am not vegan, but I love making treats that all my favorite people can enjoy. Gluten-free? I got you! Vegan? I’m all for offering recipes for you, too.
In fact, this is one of those tasty bites that I bet you will enjoy no matter your choice of diet.
I adapte this recipe from one I found on Pinch of Yum for Almond Butter Cups. One of may favorite food blogs to follow, Pinch of Yum is always on point with delicious recipes. This one is no exception. The ingredients are simple: cocoa powder, coconut oil, maple syrup, peanut butter and coarse salt.
You mix up the cocoa and maple syrup with melted coconut oil and add a pinch of salt. Then you layer the cocoa mixture into mini-muffin liners. Top it with a tiny scoop of peanut butter and then add another layer of the chocolate mixture. Then you pop them in the freezer for a bit to harden.

Easy Peanut Butter Cups {Vegan}
Ingredients
- 3/4 cup melted coconut oil
- 1/2 cup cocoa powder
- 2 tablespoons maple syrup
- Pinch of salt
- About 3/4 cup creamy peanut butter
- Coarse salt for topping
Instructions
- Stir together the coconut oil, cocoa powder, maple syrup, and a pinch of salt.
- Fill a mini size muffin tin with paper liners. Pour a small amount of the cocoa mixture into the paper cups.
- Drop a small spoonful of the peanut butter into the center of each cup.
- Top each cup with a layer of chocolate.
- Sprinkle each cup with a pinch of coarse sea salt.
- Freeze until solid. About 45 minutes.
