Citrus Salad with Nuts and Orange Mango Vinaigrette

Juicy citrus like Ruby Red grapefruit and Cara Cara oranges are the perfect brightness to add to salads like this Citrus Salad with Nuts and Orange Mango Vinaigrette. The hint of warm weather calls me toward lighter meals. This salad has been a staple for a few weeks. It’s quick to prepare and only contains a handful of ingredients: red onion, citrus fruit slices, organic salad greens and nuts.

I used Cara Cara oranges because I am obsessed with them right now. They may look like ordinary navel oranges on the outside, but inside, their flesh is pink-ish and they taste like heaven. To me, it’s almost like a mix between a pink grapefruit and an orange. They are also seedless, which makes them a snap to serve in salads. Cara Caras are generally available from December to April. So if you can’t find them for this salad, feel free to substitute your favorite citrus. I think pink grapefruit would be a natural replacement.

Another awesome component of this salad is Planters Nut-rition Essential Nutrients Mix. I just love this mix right now! I keep a bag in my car for quick snacking and I try to always have one in the pantry. This mix of cashews, walnuts, almonds, and pecans is slightly salted, making it a tasty foil for the sweetness of the citrus.

The dressing is something I concocted as a variation of my usual homemade vinaigrette, like the one that I used in my Zucchini Noodle and Quinoa Salad. I took my basic recipe and subbed in white Balsamic vinegar and Orange Mango Juice. The result is a mouthwatering vinaigrette! Super quick to make, this dressing will keep for up to 2 weeks in your fridge.

Ingredients

For the dressing:

  • 1/2 cup olive oil
  • 1/4 cup white Balsamic vinegar
  • 1/8 cup Orange Mango juice
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper

For the salad

  • 5 oz. organic Spring mix
  • 1 medium red onion cut into thin rings
  • 3-4 Cara Cara oranges or similar citrus fruit, peeled and sliced
  • 1 cup mixed nuts such as Planters Nut-trition Essential Nutrient Mix

Instructions

  • In a jar with a tight fitting lid, combine dressing ingredients. Shake until well combined.
  • In a large bowl or on a large platter, combine salad ingredients.
  • Just before serving, toss salad with a small amount of dressing (about a 1/4 of a cup). Add more dressing as desired.
  • Serve immediately.
