Quick and Easy Superfood Chicken Salad

Ingredients for the dressing
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup fresh orange juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp dry mustard
Ingredients for the Salad
- 4 Grilled or sautéed chicken breasts sliced
- 1 8.5 oz package Mann’s Organic Super Blend slaw mix
- 1 cup Matchstick carrots
- 1/2 cup Unsweetened dried cranberries
- 3-4 Green onions sliced
- Sunflower seeds
- Thinly sliced radishes
- Fresh parsley chopped
Make the salad
Divide the slaw mix among four bowls.
Divide the carrots and cranberries among the bowls.
Garnish each bowl with green onions, some sunflower seeds and radishes.
Top each salad with a little of the dressing and gently toss.
Serve with chopped parsley.
