Braised Red Cabbage with Chicken Sausages

Ingredients

  • 2 tbs olive oil
  • 1 tsp celery seed
  • 1/2 medium red onion thinly sliced
  • 1/2 red cabbage about 1 pound, sliced
  • 1/3 c white Balsamic vinegar
  • 1 tbs honey
  • salt and freshly ground black pepper to taste
  • 4 Chicken & Apple sausages like Aidell’s
  • Olive oil
  • 1/2 cup water
  • 1/2 cup white balsamic vinegar
  • juice of half a lemon

Instructions

  • Heat a large skillet to medium. Add olive oil and red onion. Sauté onions for about 3 minutes.
  • Add sliced cabbage and celery seed. Cook for 3 minutes.
  • Next add the vinegar and honey. Stir to coat the vegetables.
  • Cook for 8-10 minutes more. I like mine on a little on the crispy side, but feel free to let it cook to your desired texture.

For the sausages

  • Heat a medium sized skillet to medium heat. Add a drizzle of olive oil to pan.
  • Add sausages and cook until beginning to brown, turning occasionally, about 5 minutes.
  • Add water, vinegar and lemon to pan. Cook 5 minutes more.
  • Cover pan and cook 2-3 minutes.
  • Remove sausages from pan. You can drizzle the liquid over the sausages when serving or just discard the sauce.
