Easy Peanut Butter Cups {Vegan}

Ingredients

  • 3/4 cup melted coconut oil
  • 1/2 cup cocoa powder
  • 2 tablespoons maple syrup
  • Pinch of salt
  • About 3/4 cup creamy peanut butter
  • Coarse salt for topping

Instructions

  • Stir together the coconut oil, cocoa powder, maple syrup, and a pinch of salt.
  • Fill a mini size muffin tin with paper liners. Pour a small amount of the cocoa mixture into the paper cups.
  • Drop a small spoonful of the peanut butter into the center of each cup.
  • Top each cup with a layer of chocolate.
  • Sprinkle each cup with a pinch of coarse sea salt.
  • Freeze until solid. About 45 minutes.
